A Much Needed Break

Last week my husband and I took a short vacation to a little cabin in the Smoky Mountains. Thanks to my Mom and Dad for taking all three of our children or none of this would have ever happened! It has been over 7 years since our last vacation alone! So, two more children and lots of events later we were definitely due!

It was wonderful to take a slow paced vacation. Very different from the family vacation, where the kids are looking for non-stop entertainment! We spent our first full day taking a drive through Cades Cove and got to see our first black bear (from a distance and safety of our car!). And the next day, my loving and patient husband spent the day taking me around the craft trail to all the shops. I just love pottery and soy candles!

We found our dinners in the cabin very quiet. No children complaining about eating their veggies and our little two year old screaming, "I do it!" and "Want that!" By our last night we found ourselves imitating what dinner would have sounded like! LOL! Children defiantly give a fullness to our lives and sometimes it takes that empty feeling to appreciate the fullness better!

A New Taste

I was recently chosen to host a house party for Thai Kitchen. My husband was thrilled since he was already a Thai foodie. Myself on the other hand, has had little exposure to the Thai cuisine. I was very excited to give it a try and I think the kids were pretty curious too.


We started the evening off with Chicken Satay...


Followed by a Veggie Stirfry...


And a chicken Pad Thai.


And a great end to any meal - dessert! Chocolate Coconut Milk Cake.



I think the Chicken Satay won the vote from us all and will be making a regular show on our dinner menu! I was so proud of the kids for trying something new. It's not often I can find something that all my picky eaters will actually eat! And best of all it's easy! Thanks to Thai Kitchen for a great opportunity!
